Description
Brimming with buttery richness and the toasty crunch of pecans, this Sweet Southern Pecan Loaf is a nostalgic slice of Southern comfort. A classic quick bread passed down through generations, it’s soft, moist, and slightly caramelized thanks to brown sugar and warm spices. Whether served warm with coffee or gifted during the holidays, this loaf is a true taste of tradition—with optional flavor twists for the modern baker.
Ingredients
-
1 ¾ cups all-purpose flour
-
1 tsp baking soda
-
½ tsp salt
-
½ tsp ground cinnamon (optional)
-
½ cup unsalted butter, melted and cooled
-
1 cup light brown sugar, packed
-
2 large eggs, room temperature
-
1 tsp vanilla extract
-
1 cup chopped pecans (toasted for best flavor)
-
¼ cup whole milk (or almond milk)
Instructions
-
Preheat oven to 350°F (175°C). Grease and line an 8×4-inch or 9×5-inch loaf pan with parchment paper.
-
In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
-
In a separate large bowl, beat together melted butter, brown sugar, eggs, and vanilla until smooth.
-
Gradually stir the dry ingredients into the wet mixture until just combined. Do not overmix.
-
Fold in the chopped pecans and milk until evenly distributed.
-
Pour the batter into the prepared pan. Optional: Sprinkle extra chopped pecans on top for a decorative crust.
-
Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
-
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
-
Slice and enjoy with your favorite warm beverage or a drizzle of maple syrup.
Notes
-
Toasting pecans before folding them into the batter brings out a deeper, nutty aroma.
-
For a festive twist, add ½ cup dried cranberries or a tablespoon of bourbon.
-
Substitute gluten-free 1:1 baking flour for a GF version, or use flax eggs and vegan butter for a plant-based alternative.
-
Freeze sliced for grab-and-go breakfasts or quick snacks—just reheat in a toaster oven or microwave.
-
This loaf makes a thoughtful gift—wrap in parchment and twine for a homemade Southern touch.
