Ingredients
-
1 cup (2 sticks) unsalted butter, softened
-
1 ½ cups granulated sugar
-
3 large eggs, room temperature
-
2 teaspoons pure vanilla extract
-
2 cups all-purpose flour
-
1 teaspoon baking powder
-
½ teaspoon baking soda
-
½ teaspoon salt
-
1 cup buttermilk, room temperature
-
1 cup chopped toasted pecans
Instructions
-
Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
-
In a large bowl, cream the softened butter and sugar together until light and fluffy (about 3–4 minutes).
-
Beat in the eggs one at a time, then stir in the vanilla extract.
-
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
-
Gradually add the dry ingredients to the wet mixture, alternating with buttermilk. Start and end with the dry ingredients. Do not overmix.
-
Fold in the chopped pecans with a spatula until evenly distributed.
-
Pour the batter into the prepared loaf pan and smooth the top.
-
Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
-
Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
-
Slice and enjoy warm or at room temperature.
Notes
-
Toasting the pecans before folding them in brings out their natural oils and intensifies the flavor.
-
For a sweeter variation, add ½ cup mini chocolate chips or a banana for extra moisture.
-
Store leftovers tightly wrapped at room temperature for up to 3 days or freeze for longer storage.
-
Try topping with whipped honey butter or a vanilla glaze for a bakery-style touch.
