Instructions

  • Pat the steak dry and cut into uniform 1-inch cubes. Trim excess fat or silver skin.

  • In a bowl, toss steak cubes with olive oil, soy sauce, Worcestershire, garlic, smoked paprika, black pepper, and salt. Let marinate for 10–15 minutes while you prep your pan.

  • Heat a heavy skillet (preferably cast iron) over medium-high heat. Add a light drizzle of oil with a high smoke point.

  • Sear steak bites in a single layer, cooking in batches if needed. Sear for 2–3 minutes per side until browned and caramelized.

  • Add butter and toss the steak bites in the skillet for 1–2 minutes to coat and add extra flavor.

  • Remove from heat and let rest for 3–5 minutes before serving.
