Perfect for breakfast meal prep, these savory snacks are made with blended eggs, cottage cheese, and your favorite add-ins like bacon, veggies, or cheese. Whether you’re keto, vegetarian, or dairy-free, this recipe adapts to your lifestyle.

Ingredients

Scale
  • 6 large eggs

  • ¾ cup cottage cheese (whole milk)

  • ¼ cup whole milk or heavy cream

  • ½ cup shredded cheese (Gruyère, cheddar, or mozzarella)

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • ½ cup sautéed spinach or chopped roasted red peppers (optional)

  • ¼ cup cooked and crumbled beef bacon (optional)

  • Cooking spray or olive oil for greasing muffin tin

Instructions

  • Preheat oven to 350°F (175°C).

  • Lightly grease a non-stick muffin tin or silicone mold with cooking spray or olive oil.

  • In a blender, combine eggs, cottage cheese, milk, salt, and pepper. Blend on high for 30–45 seconds until smooth and frothy.

  • Add shredded cheese and any optional add-ins (like veggies or bacon) to each muffin cup.

  • Pour egg mixture evenly into muffin cups, filling each about ¾ full.

  • (Optional) For extra fluffiness, place the muffin tin inside a larger baking dish and fill the outer dish with 1 inch of hot water to create a water bath.

  • Bake for 18–22 minutes or until the centers are just set and slightly puffed.

  • Let cool in the tin for 5 minutes, then remove and serve warm or store for later.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.

  • Reheat in the microwave (30–45 sec from fridge; 60–75 sec from frozen).

  • Try variations like vegetarian (spinach & feta), spicy southwest (jalapeño & cheddar), or dairy-free (vegan cheese + almond milk).

  • Avoid overbaking to maintain creamy texture—check doneness at the 18-minute mark.

  • For perfect results, sauté any watery veggies like mushrooms or spinach before adding.
