½ cup cottage cheese (or substitute with Greek yogurt)

¼ cup chopped spinach (pre-cooked)

Instructions

Preheat your oven to 325°F (165°C). Lightly grease a muffin tin or silicone mold with cooking spray.

In a blender, combine eggs, cottage cheese, milk or cream, salt, and pepper. Blend until smooth and frothy.

Pour the egg mixture evenly into the prepared muffin cups or molds, filling each about ¾ full.

Add chopped vegetables, cheese, and cooked meats evenly into each cup. Lightly stir with a spoon to combine.
